- 1 tablespoon of extra-virgin olive oil
- Pinch of sea salt
- 1 onion, finely chopped
- 2 cloves of garlic, minced
- 4 cups of organic vegetable broth
- 2 cups of fresh broccoli florets
- 1/2 cup of toasted almond slices
- 1 tablespoon of freshly squeezed lemon juice
- Sea salt and freshly ground black pepper, to taste
- Freshly chopped parsley, for garnish
Instructions
- Begin by gathering the necessary ingredients: 2 cups of fresh broccoli, 1/4 cup of sliced almonds, 2-3 cloves of garlic, 2 tablespoons of olive oil, 1 teaspoon of sea salt, 1/4 teaspoon of pepper, and 4 cups of vegetable broth.
- Heat the olive oil in a large pot over medium-high heat.
- Add the salt, pepper, and vegetable broth and bring to a boil.
- Reduce the heat to low and simmer until the broccoli is tender, about 10-12 minutes.
- Carefully ladle the soup into a blender and process until smooth.
