- 1 diced onion
- A pinch of sea salt
- 3 cloves of minced garlic
- 1 cup of buckwheat groats
- 2 diced beets
- 4 cups of vegetable broth
- Sea salt and freshly ground black pepper, to taste
- Freshly chopped dill, for garnish
- Olive oil, for garnish
Instructions
- Begin by heating 1 teaspoon of coconut oil in a large pot over medium heat.
- Now, add 1 cup of buckwheat groats and 2 diced beets to the pot
- Once boiling, reduce the heat to low and simmer for 25-30 minutes, or until the buckwheat is tender.
- Using an immersion blender, blend the soup until it reaches your desired consistency
- Serve the soup garnished with freshly chopped dill and a drizzle of olive oil
