Ingredients
- 2 cups buckwheat flour
- 1/2 teaspoon kosher salt
- 1/4 teaspoon baking soda
- 6 tablespoons cold, unsalted butter, cut into cubes
- 1/4 cup granulated sugar
- 1/4 cup olive oil
- 1 large yellow onion, thinly sliced
Instructions
- Preheat your oven to 375°F.
- In a medium bowl, mix together the buckwheat flour, salt, and baking soda.
- Gradually add the buckwheat flour mixture to the creamed butter until a dough forms.
- Place the dough between two sheets of parchment paper and roll it out into a thin circular shape.
- Place the rolled dough on a baking sheet and bake for 15 minutes, or until lightly golden.
- Heat a skillet on medium-high heat and add the olive oil.
- Add the sliced onions and cook until lightly caramelized, stirring regularly, about 10-12 minutes.
- Remove from heat and set aside.
- Remove the galette from the oven and spread the onions over the top, leaving a border of about 1 inch.
- Bake for an additional 15 minutes, or until the bottom is lightly browned and the onions are fully cooked.
- Allow the galette to cool before serving.
