- 1 teaspoon baking soda

- 2 tablespoons coconut sugar or maple sugar
- 2 large organic free-range eggs
- 2 cups organic buttermilk
- 1/4 cup melted ghee
- 1 teaspoon pure vanilla extract
Instructions
Prepare the Pancake Batter:
- In a large bowl, whisk together spelt flour, baking powder, baking soda, salt, and coconut sugar.
- In another bowl, beat the eggs with buttermilk, melted ghee, and vanilla extract.
- Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Let the batter rest for 10 minutes.
Make the Quick Pear Preserves:
- Simmer for about 15-20 minutes, stirring occasionally, until the pears are soft and the mixture thickens.
- Remove from heat and let cool slightly. The preserves will thicken further upon cooling.
Cook the Pancakes:
- Heat a non-stick skillet or griddle over medium heat and lightly grease it with a small amount of ghee.
- Pour 1/4 cup of batter for each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown.
