- Butternut squash
- Black rice
- Extra-virgin olive oil
- Sea salt
- Black pepper
- Onion
- Garlic
- Ginger
- Curry paste
- Coconut milk
- Fresh cilantro
Instructions
- Preheat oven to 400°F
- Meanwhile, rinse the black rice in a fine-mesh sieve until the water runs clear
- Heat 1 tablespoon of olive oil in a large non-stick skillet over medium heat
- Add the garlic and ginger and stir for 30 seconds
- Add the coconut milk, 1/2 teaspoon of sea salt, and a few twists of black pepper
- Add the roasted butternut squash and cooked black rice and stir to combine
- Garnish with fresh cilantro and serve hot.
