Ingredients
- 1 butternut squash, peeled and diced
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon fresh ginger, grated
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon garam masala
- 1/2 teaspoon ground turmeric
- 1/4 teaspoon chili powder
- 1/2 teaspoon sea salt
- 2 tablespoons olive oil
- 1 cup lentils, rinsed and drained
- 4 cups vegetable broth
- Fresh cilantro, for garnish
Instructions
- Begin your culinary journey by preheating your oven to 400°F
- Peel and dice the butternut squash into cubes
- Place the butternut squash cubes onto a parchment-lined baking sheet
- In the meantime, heat a large skillet over medium-high heat
- Add garlic, ginger, and spices to the skillet and cook for 1 minute
- Add the lentils and vegetable broth to the skillet
- When the butternut squash is finished roasting, add it to the skillet with the lentils
- Garnish with freshly chopped cilantro and serve
