Instructions

  • Preheat your oven to 350°F (175°C) to prepare for toasting the spelt bread.
  • In a small bowl, combine 2 teaspoons of ground allspice with 3 tablespoons of coconut sugar, stirring until the mixture is uniform.
  • Melt 1/4 cup of ghee and 1/4 cup of coconut oil together in a saucepan over low heat, being careful not to overheat. Remove from heat once fully melted and combined.
  • Brush each spelt bread slice on both sides generously with the melted ghee and coconut oil mixture, ensuring a light coating that will enrich the bread with flavor and aid in toasting.
  • Sprinkle the allspice and coconut sugar mixture evenly over one side of the oil-brushed bread slices, creating a fragrant and sweetly spiced topping.
  • Arrange the bread slices on a baking sheet lined with parchment paper, spiced side up, making sure they are spaced out to allow for even toasting.
  • Place the baking sheet in the preheated oven for 5-7 minutes, or until the bread is toasted to a golden brown and the spiced topping appears caramelized. Keep a close eye on the toasting process to prevent burning.
  • While the bread is toasting, open a can of full-fat coconut milk and scoop out 1/2 cup of the solid coconut cream from the top. Place the cream in a bowl, adding 1 tablespoon of maple syrup or honey (whichever you prefer) and a pinch of salt.
  • Whisk the coconut cream, maple syrup or honey, and salt together until smooth and well combined. If needed, gently warm the mixture for a softer consistency suitable for spreading.
  • Once the toast is finished, remove the baking sheet from the oven and allow the toast to cool slightly for a minute or two.
  • Spread a generous layer of the sweetened coconut cream on the spiced side of each toast slice.
