- 2 large, fresh, organic carrots, peeled and finely grated
- 1 inch of fresh, organic ginger root, peeled and finely grated
- 1 teaspoon of extra-virgin olive oil
- 2 cups of vegetable broth (or homemade stock)
- 1 teaspoon of Himalayan pink salt
- 1/4 teaspoon of freshly ground black pepper
- 1/4 teaspoon of ground turmeric
- 1/4 teaspoon of ground cumin
- A pinch of ground cinnamon
- A pinch of freshly grated nutmeg
Instructions
- Start by gathering the ingredients: 2 carrots, 1 inch of fresh ginger root, 1 teaspoon of olive oil, and 2 cups of vegetable broth.
- Peel and finely grate the carrots and ginger.
- Heat the olive oil in a large pot over medium heat.
- Add the grated carrots and ginger to the pot, stirring to combine.
- Cook until the carrots and ginger are softened, about 5 minutes.
- Pour in the vegetable broth and bring the mixture to a boil.
- Reduce the heat to low and simmer for 10 minutes.
- Remove the pot from heat and let the soup cool for a few minutes.
- Carefully blend the soup until smooth
