  • 1/4 teaspoon of ground nutmeg
  • 1/4 teaspoon of ground cinnamon
  • 1/4 teaspoon of ground cloves
  • 1 tablespoon of freshly squeezed lemon juice
  • 2 tablespoons of freshly chopped parsley, for garnish

Instructions

  • Begin by gathering your ingredients: 1 large onion, 3 cloves garlic, 1 tablespoon fresh grated ginger, 4 carrots, 4 cups vegetable or chicken broth, and a pinch of cayenne pepper.
  • Start by chopping the onion and garlic in the same size pieces and then sauté them in a large pot with some oil or butter until they are lightly golden.
  • Add the grated ginger and stir for a few seconds.
  • Peel and dice the carrots and add them to the pot
  • Pour in the broth and bring to a boil
  • Once the carrots are tender, transfer the soup to a blender and blend until smooth
  • Taste and adjust the seasoning
  • Serve in individual bowls and garnish with a pinch of chopped parsley or chives.
