Ingredients
- Organic, freshly grated carrots
- Unrefined coconut oil
- Organic jaggery
- Organic, freshly grated coconut
- Organic almond meal
- Organic cardamom powder
Instructions
- Begin by gathering your ingredients: 1 cup of freshly grated carrots, 2 tablespoons of coconut oil, 3 tablespoons of jaggery, 1/2 cup of freshly grated coconut, 2 tablespoons of almond meal, and 1/4 teaspoon of cardamom powder
- Heat the coconut oil in a medium saucepan over medium-high heat
- Add the grated carrots and jaggery, stirring to combine and incorporate
- Reduce the heat to low and simmer for 10 minutes, stirring occasionally.
- Increase the heat to medium-high and add in the grated coconut and almond meal
- Turn off the heat and stir in the cardamom powder
- Transfer the mixture to a parchment-lined baking sheet
- With lightly oiled hands, form the mixture into small, bite-sized balls
- Refrigerate for 2 hours to firm.
