Ingredients
- All-purpose flour – 1 cup (125g)
- Baking powder – 1 teaspoon (7g)
- Ground cinnamon – ½ teaspoon (3g)
- Eggs – 3 large
- Caster sugar – ¾ cup (150g)
- Vanilla extract – 2 teaspoons (10ml)
- Carrots – 3 large
- Vegetable oil – 2 tablespoons (30ml)
- Honey – 2 tablespoons (30ml)
- Salt – pinch
- Black pepper – ¼ teaspoon (1g)
- Fresh coriander – 3 tablespoons (3g)
Instructions
- In a medium bowl, mix together 1 cup (125g) of all-purpose flour, 1 teaspoon (7g) of baking powder, and ½ teaspoon (3g) of ground cinnamon.
- In a separate bowl, whisk together 3 large eggs, ¾ cup (150g) of caster sugar, and 2 teaspoons (10ml) of vanilla extract until combined.
- Slowly add the dry ingredients to the wet ingredients and stir until combined.
- Peel 3 large carrots and cut into thin slices.
- Heat 2 tablespoons (30ml) of vegetable oil in a large skillet over medium heat
- Add 2 tablespoons (30ml) of honey, a pinch of salt, and ¼ teaspoon (1g) of black pepper to the skillet.
- Cook for an additional 5 minutes, stirring frequently, until the carrots are caramelised.
- Remove from heat and stir in 3 tablespoons (3g) of chopped fresh coriander.
- Transfer the carrot mixture to the bowl with the cake batter and mix until combined.
- Pour the batter into the prepared cake tin and bake for 25 minutes or until a skewer inserted into the center comes out clean.
- Allow the cake to cool in the tin for 10 minutes before transferring to a wire rack to cool completely.
- Serve warm or cold and enjoy!
