Ingredients

  • 1 cup of dried chickpeas, soaked overnight
  • 3 cups of fresh water
  • 1 cucumber, thinly sliced
  • 1 onion, thinly sliced
  • 1 bunch of fresh mint, chopped
  • 1 tablespoon of extra-virgin olive oil
  • Pinch of sea salt
  • Pinch of freshly ground black pepper
  • 1 flatbread wrap

Instructions

  • Begin by soaking a cup of chickpeas overnight in cold water
  • The next day, drain the chickpeas and rinse with fresh water
  • In a medium saucepan, bring the chickpeas and three cups of water to a boil over high heat
  • Reduce the heat to low and simmer the chickpeas for 40 minutes, or until they are tender
  • Thinly slice one cucumber and one onion and set aside
  • Chop one bunch of fresh mint and set aside
  • In a large bowl, combine the cooked chickpeas with the cucumber, onion, and mint
  • Add a tablespoon of olive oil and a pinch of salt and pepper
  • Heat a large skillet over medium heat
  • Spread the mixture over the skillet and cook until crispy and golden, stirring occasionally
  • Place the wrap mixture on a flatbread, wrap tightly, and enjoy!
