Ingredients
- 1 ½ cups all-purpose flour
- 1 teaspoon sugar
- ¾ teaspoon salt
- ¼ teaspoon instant yeast
- ¾ cup warm water
- 2 tablespoons extra-virgin olive oil
- 1 tablespoon honey
- 1 tablespoon extra-virgin olive oil
- 1 onion, chopped
- 1 can chickpeas, drained and rinsed
- 1 teaspoon minced garlic
- 1 teaspoon dried oregano
- 1 pint cherry tomatoes
- Salt and pepper, to taste
- Fresh parsley, to garnish
Instructions
- Preheat the oven to 375°F.
- Begin by preparing the pizza dough
- Slowly pour the wet ingredients into the dry ingredients and mix until the dough comes together.
- Transfer the dough to a lightly floured surface and knead it for 5 minutes until it forms a smooth ball.
- Place the dough in a lightly oiled bowl, cover it with plastic wrap, and let it rise for 1-2 hours.
- In a medium saucepan, heat 1 tablespoon of extra-virgin olive oil over medium heat
- Add 1 can of drained and rinsed chickpeas, 1 teaspoon of minced garlic, and 1 teaspoon of dried oregano
- Add 1 pint of cherry tomatoes and cook for another 5 minutes until the tomatoes are softened and lightly browned.
- Remove the pan from the heat and season with salt and pepper to taste.
- Roll out the pizza dough on a lightly floured surface and transfer it to a greased baking sheet.
- Spread the chickpea and tomato mixture over the pizza dough.
- Bake the pizza in the preheated oven for 20-25 minutes until the crust is golden brown.
- Carefully remove the pizza from the oven and sprinkle it with fresh parsley.
