- Fresh cherries (2 cups, pitted and halved)
- Vegan chocolate chips (1 cup)
Instructions
- Preheat your oven to 350°F.
- Grease an 8x8 inch baking dish with coconut oil.
- In a bowl, mix together 1 cup of all-purpose flour, 1/2 teaspoon of baking powder, 1/2 teaspoon of salt, and 1/4 cup of vegan butter until a crumbly mixture forms.
- Press the mixture into the bottom of the greased baking dish.
- Bake for 20 minutes or until edges have lightly browned.
- In a medium bowl, combine 1/2 cup of almond milk, 1/2 cup of vegan cream cheese, and 1/4 cup of vegan butter.
- Spread the mixture over the cooled crust.
- Top with 2 cups of fresh cherries, pitted and halved.
- Bake for 25 minutes or until top is lightly golden brown.
- Let cool for 15 minutes.
- In a small saucepan, melt 1 cup of vegan chocolate chips.
- Pour the melted chocolate over the cooled cherry layer.
- Let cool completely before serving
