  • 2 cups mixed ancient grains spelt flakes, rye flakes, and rolled oats

  • 3 tablespoons ghee or coconut oil, melted
  • 3 tablespoons honey, maple syrup, or agave

Instructions

  • Begin by assembling your premium ingredients, including 2 cups of mixed ancient grains such as spelt flakes, rye flakes, and rolled oats, 1/2 cup of dried cherries, 1/4 cup of raw cacao nibs, 1/4 cup of roughly chopped roasted hazelnuts, and 1/4 cup of coconut flakes.
  • In a dry skillet over medium heat, lightly toast the ancient grains for about 3-4 minutes, or until they emit a nutty aroma, taking care not to burn them. Stir frequently to ensure even toasting. Transfer to a large mixing bowl to cool.
  • In the same skillet, add the coconut flakes and toast until golden brown, approximately 1-2 minutes. Be vigilant as coconut flakes can burn quickly. Once toasted, add them to the mixing bowl with the grains.
  • While the grains cool, take the dried cherries and rehydrate them by soaking in warm water for about 10 minutes to soften their texture. Drain the cherries well and pat dry with a clean kitchen towel.
  • Now, add the rehydrated cherries, cacao nibs, and roasted hazelnuts to the mixing bowl with the grains and coconut flakes. Gently combine these ingredients with a wooden spoon, ensuring an even distribution.
  • To create the wet mixture that will lightly coat the muesli, combine 3 tablespoons of melted ghee or coconut oil with 3 tablespoons of honey, maple syrup, or agave in a small bowl. Whisk these together until they form a cohesive mixture.
  • Drizzle the ghee or oil and sweetener mixture over the dry muesli and stir thoroughly to coat all components evenly. Make sure every piece is lightly dressed with the sweet mixture.
  • Preheat your oven to 150 degrees Celsius (300 degrees Fahrenheit). Meanwhile, spread the muesli mixture on a baking sheet lined with parchment paper in an even layer, allowing space for the ingredients to toast without crowding.
  • Bake the muesli in the preheated oven for about 15 minutes, or until the mixture is crisp and lightly golden. Halfway through the baking time, use a spatula to turn and rotate the muesli for even toasting.
  • Once baked to perfection, remove the muesli from the oven and allow it to cool completely on the tray. The muesli will continue to crisp as it cools.
