Ingredients

For the Puddings:

  • 2 cups organic chia seeds for the entire batch
  • 8 cups grass-fed whole fat dairy milk or full-fat coconut milk for the entire batch
  • Natural coloring agents: Matcha powder green, blue spirulina (blue), acai berry powder (purple), and mango puree (orange)
  • 2 teaspoons vanilla bean paste
  • 1 teaspoon high-quality Ceylon cinnamon plus extra for garnish
  • A pinch of Himalayan pink salt

For the Toppings:

  • Edible flowers
  • Assorted fresh berries
  • Homemade granola
  • Sliced mango
  • Freeze-dried dragon fruit
  • Dark chocolate shavings
  • Shaved coconut

Instructions

Prepare the Pudding:

  • In a mixing bowl, whisk together the chia seeds and your choice of grass-fed whole fat dairy milk or full-fat coconut milk.
  • Add the Ceylon cinnamon and vanilla bean paste. If desired, add a pinch of Himalayan pink salt. Stir thoroughly until the mixture is well combined.
  • Divide the chia seeds and milk or coconut milk mixture into five portions to create different colors.
  • Mix each portion with a different natural coloring agent: matcha powder for green, blue spirulina for blue, acai berry powder for purple, and mango puree for orange. Leave one plain.
  • Whisk each batch separately and refrigerate overnight to set.

Layer the Parfait:

  • Once the chia puddings have set, take the jars and begin layering the different colors to create a vibrant effect. Start with one color and gently add the next layer, taking care not to mix the colors.

Add the Toppings:

  • Top each jar with a variety of garnishes such as edible flowers, fresh berries, granola, sliced mango, freeze-dried dragon fruit, chocolate shavings, and shaved coconut. Arrange them artistically for visual appeal.

Chill and Serve:

  • Chill the parfaits in the refrigerator until ready to serve.
  • Present the parfaits as a delightful and nutritious breakfast or snack option, perfect for a spa-like, health-conscious setting.

Serving Suggestion:

  • Serve the parfaits with a small spoon, and encourage guests to delve deep into the jar to experience all the flavors and colors in each bite.
