- 2 tablespoons maple syrup
- 1/2 teaspoon vanilla extract

- Coconut sugar for garnish quantity to taste
Instructions
- In a medium-sized bowl, combine 1 cup of rolled oats, 1 tablespoon of chia seeds, and 1 teaspoon of ground cinnamon.
- Pour 1 1/2 cups of fresh almond milk or coconut milk over the oat mixture, ensuring the ingredients are fully submerged.
- Gently fold in 1/4 cup of grated apple and 2 tablespoons of raisins to the mixture.
- Cover the bowl with plastic wrap or a clean kitchen towel and place it in the refrigerator to soak overnight.
- In the morning, remove the bowl from the refrigerator and give the Bircher muesli a good stir to ensure an even consistency.
- Toast 1/4 cup of chopped pecans in a dry pan over medium heat until they become fragrant and slightly golden brown, then set aside to cool.
- In a small saucepan, melt 1 tablespoon of coconut oil with 2 tablespoons of maple syrup, stirring until well combined to create a cinnamon roll drizzle.
- Remove the saucepan from the heat and add 1/2 teaspoon of vanilla extract and a pinch of salt, stirring well.
- Divide the soaked muesli into serving bowls and drizzle each portion with the cinnamon roll drizzle.
