Ingredients
- 10 dried figs
- 3 cloves of garlic, peeled and finely minced
- 2 small shallots, peeled and thinly sliced
- 1 teaspoon of ground cloves, rinsed
- 4 cups of vegetable broth
- 2 tablespoons of olive oil, plus more for drizzling
Instructions
- Start by prepping the ingredients
- Heat 2 tablespoons of olive oil in a pan over medium heat
- Add the figs and ground cloves to the pan and stir to combine
- Pour in 4 cups of vegetable broth and bring the mixture to a boil
- Remove the pan from heat and let the soup cool for 10 minutes.
- Once cooled, transfer the soup to a blender and blend until smooth.
- Serve the soup warm or chilled, topped with a drizzle of olive oil and a sprinkle of ground cloves.
