Ingredients
- 1/2 cup whole oats
- 2 cups coconut milk
- 1/2 cup unsweetened shredded coconut
- 1/2 teaspoon ground cinnamon
- 2 apples, peeled and cored
- Honey, for topping
- Additional shredded coconut, for topping
Instructions
- Begin by soaking 1/2 cup of whole oats in 2 cups of coconut milk overnight.
- In the morning, warm the soaked oats in a saucepan over medium heat, stirring occasionally.
- Add 1/2 cup of unsweetened shredded coconut and 1/2 teaspoon of cinnamon.
- Simmer for 5 minutes, stirring often, until the oats and coconut become creamy and the desired consistency is reached.
- Peel and core two apples, then chop them into small cubes.
- Add the apples to the oats and simmer for another 5 minutes, stirring occasionally.
- Serve the porridge topped with a sprinkle of shredded coconut and a drizzle of honey.
