- ½ pound penne pasta
- 2 tablespoons olive oil
- 1 shallot, minced
- 1 clove garlic, minced
- 2 tablespoons white wine
- 10 ounces fresh spinach
- ½ cup heavy cream
- Salt and pepper, to taste
- Freshly grated Parmesan cheese, to serve
Instructions
- Start by bringing a large pot of salted water to a boil
- Once boiling, add ½ pound of penne pasta and cook until al dente, about 10 minutes
- While the pasta cooks, warm 2 tablespoons of olive oil in a large sauté pan over medium heat
- Add a minced shallot and cook for 2 minutes until softened
- Add 1 clove of minced garlic and cook for 1 minute more
- Add 2 tablespoons of white wine and cook for 1 minute more
- Add 10 ounces of fresh spinach and cook for 2 minutes until wilted
- Add ½ cup of heavy cream and simmer for 3 minutes
- Add salt and pepper to taste
- Remove from heat
- Drain the cooked pasta and add it to the sauté pan
- Stir the pasta and sauce together, and cook for 1 minute to combine flavors
- Serve the pasta with freshly grated Parmesan cheese
