- 2 large sweet potatoes, peeled and cubed
- 4 tablespoons olive oil
- 1 teaspoon sea salt
- 1/2 cup diced onion
- 1/2 teaspoon saffron threads
- 4 cups vegetable broth
- 1/2 cup coconut milk
- Fresh parsley, for garnish
Instructions
- Start by preheating your oven to 375°F
- In a large pot, heat 2 tablespoons of olive oil on medium-high heat
- Add in the roasted sweet potato cubes and 1/2 teaspoon of saffron threads
- Add 4 cups of vegetable broth to the pot
- Using an immersion blender, blend the soup until creamy
