  • 1/2 cup coconut sugar
  • 1 large egg yolk
  • 1 teaspoon pure vanilla extract
  • Gold edible glitter such as Rainbow Dust Metallic Food Paint Gold

For Holo Glitter Milk:

  • 4 cups whole milk or plant-based milk alternative
  • 2 teaspoons honey or agave syrup adjust to taste
  • 1/2 teaspoon almond extract
  • Edible holographic glitter dust food grade, such as Fancy Sprinkles Prism Powder

Instructions

For Cookies:

  • Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Make the crimson dough: Cream together ghee and coconut brown sugar. Add egg white, vanilla, beet powder, pomegranate juice, and lemon zest.
  • In a separate bowl, whisk spelt flour, baking powder, and salt. Gradually mix dry ingredients into the wet to form the crimson dough.
  • Make the gold dough: Cream together ghee and coconut sugar. Add egg yolk and vanilla.
  • In another bowl, whisk together spelt flour, baking powder, and salt. Gradually mix into the wet ingredients to form the gold dough.
  • Sprinkle red edible glitter into the crimson dough and gold edible glitter into the gold dough. Fold in gently to distribute.
  • Take small pieces of each dough, twist together to create a marbled effect, roll into balls, and flatten slightly on the baking sheet.
  • Bake for 10-12 minutes. Cool on the sheet before transferring to a wire rack.

For Holo Glitter Milk:

  • Blend milk with honey and almond extract until frothy.
  • Pour into tall glasses.
  • Stir in edible holographic glitter just before serving for a sparkling effect.
