  • 1 cup split mung daal
  • 2 tablespoons ghee/oil
  • 1 teaspoon cumin seeds
  • 1 onion, chopped
  • 1 teaspoon turmeric
  • 2 cups water
  • 1/2 cup dandelion greens
  • 1/2 cup flat-leaf parsley
  • 1 teaspoon sea salt
  • freshly ground black pepper, to taste
  • freshly chopped cilantro, for garnish

Instructions

  • Begin by soaking 1 cup of split mung daal in 2 cups of water for an hour.
  • In a medium pot, heat 2 tablespoons of ghee or oil over medium-high heat.
  • Add 1 teaspoon of cumin seeds and stir until they become fragrant.
  • Add 1 chopped onion and sauté until lightly browned.
  • Add 1 teaspoon of turmeric and stir for 1 minute.
  • Add the soaked daal and 2 cups of water, stirring to combine.
  • Bring the mixture to a boil, then reduce the heat to low and simmer for 20 minutes.
  • In the meantime, gather 1/2 cup of dandelion greens and 1/2 cup of parsley.
  • Rinse the greens and parsley, then finely chop and set aside.
  • Once the daal has finished simmering, add in the dandelion greens and parsley, stirring to combine.
  • Add 1 teaspoon of sea salt and freshly ground black pepper to taste.
  • Simmer the mixture for an additional 5 minutes.
  • Serve the soup hot, topped with a garnish of freshly chopped cilantro.
