- Begin by soaking 1 cup of split mung daal in 2 cups of water for an hour.
- Add 1 teaspoon of cumin seeds and stir until they become fragrant.
- Add 1 chopped onion and sauté until lightly browned.
- Add 1 teaspoon of turmeric and stir for 1 minute.
- Add the soaked daal and 2 cups of water, stirring to combine.
- Bring the mixture to a boil, then reduce the heat to low and simmer for 20 minutes.
- In the meantime, gather 1/2 cup of dandelion greens and 1/2 cup of parsley.
- Rinse the greens and parsley, then finely chop and set aside.
- Once the daal has finished simmering, add in the dandelion greens and parsley, stirring to combine.
- Add 1 teaspoon of sea salt and freshly ground black pepper to taste.
- Simmer the mixture for an additional 5 minutes.
- Serve the soup hot, topped with a garnish of freshly chopped cilantro.
