  • 2 cups of freshly ground besan (chickpea flour)

  • 1 teaspoon of organic cane sugar

  • 1 teaspoon of ground cumin
  • 1/2 cup of hot spring water
  • 1/4 cup of cold-pressed organic oil (olive or coconut)
  • 1/2 cup of warm spring water
  • A selection of freshly-made dips and chutneys, such as almond-coconut chutney, cilantro-garlic yogurt, and peanut-coconut chutney.

Instructions

  • Begin by gathering your ingredients: 2 cups of besan (chickpea flour), 1 teaspoon of salt, 1 teaspoon of sugar, 1 teaspoon of fruit vinegar, 1 teaspoon of baking soda, 1 teaspoon of ground cumin, 1/2 cup of hot water, 1/4 cup of oil, and 1/2 cup of warm water
  • In a medium sized bowl, combine the besan, salt, sugar, fruit vinegar, baking soda, and ground cumin
  • Gradually add the hot water and oil to the dry ingredients and whisk until it forms a smooth and creamy batter.
  • Add the warm water and whisk until the batter becomes light and airy.
  • Grease a 9-inch cake pan and pour the batter into the pan.
  • Place the pan on the center rack of a preheated oven at 375 degrees F and bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
  • Let the dhokla cool in the pan for 10 minutes before turning it onto a plate.
  • Slice the dhokla into small pieces and arrange them on a serving plate.
  • Serve the dhokla with a delicate dip such as yogurt or a coconut chutney.
