Ingredients

  • 2 tbsp flaxseed meal
  • 1 tbsp coconut oil melted
  • 1 tsp lime zest
  • 1/2 tsp Himalayan pink salt
  • A pinch of dried ground ginger
  • A pinch of thyme or finely chopped fresh mint
  • Optional: a drizzle of raw agave nectar for added sweetness
  • Clear unflavored gelatin or agar-agar powder as needed per package instructions
  • Blue spirulina powder or natural blue food coloring
  • White gelatin or agar-agar powder for the milky swirls

Instructions

Preparation:

  • Line an 8-inch square baking dish with parchment paper, leaving an overhang for easy removal.

Creating the Base Mixture:

  • Blend dates in the food processor until a sticky paste forms.
  • Add cashews and rolled oats; pulse to combine but maintain some texture.
  • In a bowl, mix the date, cashew, and oat mixture with coconut flakes, flaxseed meal, lime zest, salt, and ground ginger.

Hydrating Chia Seeds:

  • Soak chia seeds in coconut water for 10-15 minutes until a gel-like consistency is achieved.

Preparing Gelatin or Agar-Agar:

  • Prepare the clear gelatin or agar-agar according to package instructions, but use coconut water instead of regular water to enhance the electrolyte content. Repeat the process with white gelatin or agar-agar for the milky swirls.

Coloring:

  • Once the gelatins are slightly cooled but still liquid, divide them into two portions. Leave one portion clear, and mix blue spirulina or food coloring into the other until you achieve the desired turquoise color.

Combining Everything:

  • Gently fold the chia gel into the date, cashew, and oat mixture.
  • Add the clear gelatin mixture to the base and mix until just combined.
  • Drizzle the blue gelatin mixture and white gelatin mixture over the base and use a skewer or knife to swirl them through the base to create a marbled effect.
  • Sprinkle in the thyme or mint for the flecks of green.

Setting the Bars:

  • Transfer the mixture to the prepared baking dish, spreading it evenly.
  • Refrigerate for at least 4-6 hours, or until fully set.

Finishing the Bars:

  • Once set, lift the mixture from the dish using the parchment paper overhang.
  • With a sharp knife, cut into 8 bars. Clean the knife between each cut to ensure clean edges.
