Instructions
- Preparation: Preheat your oven to 375°F (190°C). Grease a loaf pan with a bit of ghee.
- Dry Ingredients: In a large bowl, sift together the flour, baking powder, baking soda, and salt.
- Wet Ingredients: In a separate bowl, whisk together the melted ghee and sweetener. Stir in the buttermilk.
- Combine: Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
- Add-ins: Gently fold in the thyme leaves, chopped figs, chopped olives, and lemon zest into the batter.
- Bake: Transfer the batter into the prepared loaf pan. Sprinkle the top with a few thyme leaves for garnish. Bake for 40-50 minutes, or until a toothpick inserted into the center comes out clean.
- Cool: Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
