- 1 cup spelt flour or fine whole wheat flour
- 2 large eggs
- 1 1/2 cups almond milk or cow's milk
- 1 tablespoon melted ghee clarified butter
- 2 tablespoons organic sugar
- A pinch of Himalayan pink salt
- Butter or ghee for cooking
- For the Fresh Apple Filling:
- 2 large green apples cored and very thinly sliced
- 1 teaspoon lemon juice to prevent browning
- 1/4 cup organic sugar
- 1/2 teaspoon ground cinnamon
- For the Cream Topping:
- 1 cup heavy cream or coconut cream
- 2 tablespoons powdered sugar
- 1 teaspoon vanilla extract
Instructions
- Prepare the Crepe Batter:
- Cook the Crepes:
- Pour a small amount of batter into the pan, swirling to spread thinly. Cook until the edges begin to lift, then flip and cook the other side. Set aside the cooked crepes.
- Prepare the Fresh Apple Filling:
- Thinly slice the green apples and toss them in lemon juice to prevent browning.
- Make the Cream Topping:
- Whip the heavy cream or coconut cream with powdered sugar and vanilla extract until it forms soft peaks.
- Assemble the Crepes:
- Lay out a crepe and arrange a portion of the fresh apple slices over one half.
- Gently fold or roll the crepe to enclose the apple slices.
- Repeat with the remaining crepes and apple filling.
- Serve:
- Serve the crepes topped with a dollop of the whipped cream.
- Optionally, drizzle with honey or a light caramel sauce for added sweetness.
