Fruit Maki with Mascarpone and Berry Center
Fun breakfast "sushi" made with fruit makes a beautiful treat!

Ingredients
For the Crepes:
- 1 cup spelt flour or fine whole wheat flour
- 2 large eggs
- 1 1/2 cups almond milk or cow's milk
- 1 tablespoon melted ghee clarified butter
- A pinch of Himalayan pink salt
For the Filling:
- 1 cup mascarpone cheese
- 2 tablespoons maple syrup or honey
- 1 teaspoon pure vanilla extract
- Sliced strawberries or mixed berries for the center
For the Thin Green Layer:
- Green fruit leather made from pureed kiwi or spinach for color, sweetened with a bit of honey
- Option 1: Kiwi-Based Fruit Leather
- 4-5 ripe kiwis peeled
- 2 tablespoons honey or maple syrup adjust according to sweetness of kiwis
- 1 tablespoon lemon juice
- Option 2: Spinach-Based Fruit Leather
- 2 cups fresh spinach leaves
- 1 ripe banana to add sweetness and consistency
- 2 tablespoons honey or maple syrup
- 1 tablespoon lemon juice to preserve the green color
For the Topping:
- Thinly sliced kiwi strawberries, and mango (to resemble sushi toppings)
Instructions
Make the Fruit Leather:
- Prepare the Puree:
- For Kiwi: Blend the peeled kiwis with honey and lemon juice until smooth.
- Preheat the Oven:
- Preheat your oven to the lowest temperature setting, ideally around 140°F (60°C) to 170°F (77°C).
- Prepare the Baking Sheet:
- Line a baking sheet with parchment paper.
- Spread the Puree:
- Pour the fruit puree onto the lined baking sheet. Spread it evenly with a spatula or the back of a spoon to about 1/8 inch thickness.
- Dry the Fruit Leather:
- Place the baking sheet in the oven. Bake for 4-6 hours, or until the fruit leather is set and slightly tacky, but not sticky. The exact time will depend on the thickness of the puree and the oven temperature.
- Check for Doneness:
- The fruit leather should peel off easily from the parchment paper and have a flexible, leather-like texture.
- Cool and Cut:
- Allow the fruit leather to cool completely at room temperature. Cut it into strips or shapes as required for your recipe.
- Store:
- Store the fruit leather in an airtight container. It can be kept at room temperature for several days or refrigerated for longer storage.
Prepare the Crepe Batter:
- Whisk together the flour, eggs, almond milk, melted ghee, and salt. Cook thin crepes and let them cool.
Make the Mascarpone Filling:
- In a bowl, mix mascarpone cheese with maple syrup and vanilla extract until smooth.
Assemble the Fruit Maki:
- Cut the crepes into 1.5-inch wide strips.
- Place a strip of green fruit leather on each crepe strip.
- Spread a thin layer of the mascarpone mixture over the fruit leather.
- Place a slice of strawberry or a few berries at one end and roll tightly to form a small log.
Prepare the Fruit Toppings:
- Thinly slice the kiwi, strawberries, and mango.
- Finish and Serve:
- Top each maki with a slice of fruit, arranging them to mimic traditional sushi aesthetics.
- Serve these delicate maki as a unique, bite-sized dessert or part of a brunch spread.
Garnish:
- Optionally, serve with a side of fruit coulis or a drizzle of honey for added sweetness and elegance.
