- 1 cup coconut oil
- 1 cup pure maple syrup
- ½ cup coconut sugar
- 2 teaspoons vanilla extract
- 3 cups rolled oats
- 2 cups almond meal
- 1 cup spelt flour
- 2 teaspoons baking powder
- 2 tablespoons ground ginger
- 2 teaspoons ground cinnamon
- 1 teaspoon sea salt
- 2 tablespoons freshly grated ginger
- 1 cup chopped walnuts (optional)
Instructions
- Made with pure, natural ingredients, each bite will be a reminder of the therapeutic bond between the chef and nature’s ingredients
- Preheat your oven to 350 degrees F (175 degrees C).
- In a medium bowl, whisk together the coconut oil, maple syrup, and vanilla extract until smooth.
- In a large bowl, combine the oats, almond meal, millet flour, baking powder, ground ginger, cinnamon, and salt
- Add in the freshly grated ginger and mix to combine.
- Line two baking sheets with parchment paper.
- Using a tablespoon, scoop out the dough and form into 1 ½ inch balls
- Bake for 15-20 minutes, or until the cookies are golden and fragrant.
- Allow the cookies to cool on the baking sheets for 10 minutes before transferring to a wire rack to cool completely.
