Ingredients

  • • 1 cup (120g) almond meal
  • • 1 cup (120g) buckwheat flour
  • • ½ cup (60g) cornstarch
  • • ½ cup (120g) golden sugar
  • • ¼ cup (60g) melted butter
  • • 2 tablespoons golden syrup
  • • 2 tablespoons molasses
  • • 2 teaspoons ground ginger
  • • 1 teaspoon ground cardamom
  • • ½ teaspoon ground cinnamon

Instructions

  • Preheat oven to 350°F (175°C).
  • In a medium bowl, whisk together the almond meal, buckwheat flour, cornstarch, and golden sugar.
  • In a separate bowl, whisk together the melted butter, golden syrup, and molasses.
  • Add the wet ingredients to the dry and mix until combined.
  • Separately, grind together the ginger, cardamom, and cinnamon in a spice grinder or mortar and pestle until fine.
  • Add the spices to the cookie dough and mix until incorporated.
  • Scoop the dough into 1-inch balls and place on a parchment-lined baking sheet.
  • Bake for 12 minutes, or until the edges are golden.
  • Cool on a wire rack before serving.
