Ingredients
- • 1 cup (120g) almond meal
- • 1 cup (120g) buckwheat flour
- • ½ cup (60g) cornstarch
- • ½ cup (120g) golden sugar
- • ¼ cup (60g) melted butter
- • 2 tablespoons golden syrup
- • 2 tablespoons molasses
- • 2 teaspoons ground ginger
- • 1 teaspoon ground cardamom
- • ½ teaspoon ground cinnamon
Instructions
- Preheat oven to 350°F (175°C).
- In a medium bowl, whisk together the almond meal, buckwheat flour, cornstarch, and golden sugar.
- In a separate bowl, whisk together the melted butter, golden syrup, and molasses.
- Add the wet ingredients to the dry and mix until combined.
- Separately, grind together the ginger, cardamom, and cinnamon in a spice grinder or mortar and pestle until fine.
- Add the spices to the cookie dough and mix until incorporated.
- Scoop the dough into 1-inch balls and place on a parchment-lined baking sheet.
- Bake for 12 minutes, or until the edges are golden.
- Cool on a wire rack before serving.
