Instructions
- Gather the following ingredients in preparation for the Gingersnap Muesli: 2 cups spelt flakes, 1 cup ancient grain puffs (like amaranth or quinoa puffs), 1/2 cup rye flakes, 1/4 cup buckwheat groats, 1/2 cup raw almonds, 1/4 cup pumpkin seeds, 1 teaspoon ground ginger, 1 teaspoon cinnamon, 1/2 teaspoon ground cardamom, 1/4 teaspoon ground nutmeg, a pinch of fine sea salt, 1/4 cup coconut oil, and 1/3 cup maple syrup or honey.
- Preheat the oven to 300°F (150°C), and line a baking sheet with parchment paper to prepare for toasting the muesli.
- In a large mixing bowl, combine the spelt flakes, ancient grain puffs, rye flakes, buckwheat groats, raw almonds, and pumpkin seeds, mixing well to ensure even distribution of the grains and nuts.
- In a small saucepan, gently heat the coconut oil until it is melted, then whisk in the maple syrup or honey. Continue warming the mixture while stirring, until it becomes homogeneous and slightly more fluid.
- Spread the mixture out evenly on the prepared baking sheet, and place it in the preheated oven. Toast the muesli for 15-20 minutes, or until golden brown and fragrant, stirring occasionally to ensure even toasting and to prevent burning.
- Once toasted, remove the muesli from the oven and allow it to cool completely on the baking sheet. As it cools, the muesli will become crisper and develop its characteristic texture.
- Store the cooled Gingersnap Muesli in an airtight container at room temperature for up to two weeks, or refrigerate for extended freshness.
- To serve, spoon the desired amount of Gingersnap Muesli into a bowl. You may add fresh, seasonal fruit as per sattvic principles, such as sliced banana, apple, or berries for added sweetness and flavor.
- Pour a generous amount of almond milk, soy milk, or any other sattvic non-dairy milk over the muesli, adjusting the quantity to achieve your preferred consistency.
