Ingredients
- • 1 sheet of ready-made puff pastry
- • 1 tablespoon of unsalted butter
- • 2 cups fresh green peas
- • 2 tablespoons of fresh mint, finely chopped
- • 1/4 cup heavy cream
- • Salt and freshly ground black pepper, to taste
Instructions
- Preheat the oven to 375°F.
- Roll out the pastry sheet on a lightly floured work surface
- Place the tartlet tins on a baking tray and bake in the preheated oven for 12 minutes.
- Meanwhile, prepare the filling
- Add the chopped mint, a pinch of salt, and 1/4 cup of water to the pan and continue to cook until the peas are tender and the liquid has evaporated, about 5 minutes.
- Remove the pan from the heat and mash the peas with a fork
- Spoon the pea mixture into the tartlet tins and spread evenly
- Remove from oven and allow to cool before serving
