- 1 large onion, diced
- 4 cloves garlic, minced
- 4 medium-sized green tomatoes, diced
- 4 cups vegetable broth
- 1 cup heavy cream
- Sea salt and freshly ground black pepper, to taste
- Fresh parsley, for garnish (optional)
Instructions
- Begin by heating a large pot over medium-high heat
- Next, add 1 large diced onion and sauté for 3-4 minutes, stirring occasionally, until softened.
- Add 4 cloves of minced garlic and cook for an additional minute.
- Now, add in 4 medium-sized green tomatoes that have been diced
- Next, add 4 cups of vegetable broth
- Once the tomatoes have softened, reduce the heat to low and stir in one cup of heavy cream.
- Using an immersion blender, blend the mixture until creamy and smooth.
- Taste and adjust the seasoning with sea salt and freshly ground black pepper.
- To serve, ladle the soup into individual bowls and garnish with a sprinkle of freshly chopped parsley.
