- Begin with 1 cup of red Himalayan rice
- Place the rinsed rice in a pot and add 2 cups of cold, pure water
- Once boiling, reduce the heat to low and cover the pot
- While the rice is cooking, heat up 2 tablespoons of ghee in a large pan over medium-high heat
- Add 1 cup of diced onions and sauté for 5 minutes
- Add 1 cup of diced carrots and 1 cup of diced celery and sauté for an additional 5 minutes, until the vegetables are golden brown.
- Add the cooked rice to the pan and stir until it is evenly combined with the vegetables.
- Garnish the pilaf with chopped cilantro, a sprinkling of sea salt, and a few drops of lemon juice
- Serve warm and enjoy the heavenly flavors of this pilaf, mindful of the nourishing nature of the ingredients.
