Garnish:
- Slivered almonds or edible flowers optional
Instructions
Soak the Raisins:
- In a small bowl, soak the raisins in the herbal tea for at least 2 hours, or overnight for deeper infusion. Drain and pat dry before use.
Prepare the Dough:
- In a large mixing bowl, combine spelt flour, almond flour, and a pinch of salt.
- In another bowl, cream together the ghee and honey (or maple syrup) until smooth. Stir in the vanilla extract.
- Gradually mix the wet ingredients into the dry ingredients. Fold in the tea-soaked raisins and cardamom until the dough comes together.
Form the Cookies:
- Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Roll the dough into small balls, about 1 inch in diameter, and flatten them slightly to form rounds.
- Place them on the prepared baking sheet, leaving space between each cookie.
Bake:
- Bake for 12-15 minutes or until the edges are lightly golden.
- Remove from the oven and let them cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Garnish:
- Before serving, garnish each cookie with a sliver of almond or an edible flower for an elegant touch.
