- Collect approximately 10 fresh juniper berries and, using a mortar and pestle, gently crush them to release their oils.
- Zest one lime, ensuring only the green part of the peel is removed to avoid the bitter white pith, which can detract from the syrup's flavor.
- In a small saucepan, combine 1 cup of filtered water with the crushed juniper berries and lime zest.
- Add 1/2 cup of agave syrup to the saucepan, opting for a light organic variety to ensure the purity and mildness of the syrup's flavor profile.
- Place the saucepan over medium heat and stir the mixture gently to integrate the agave syrup evenly with the water, juniper berries, and lime zest.
- Bring the mixture to a simmer, making certain not to boil aggressively as it can lead to the breakdown of the delicate flavors of the juniper and agave.
- Once a gentle simmer is achieved, reduce the heat and allow to steep for 15 minutes, enabling the juniper and lime zest to fully infuse the syrup.
- After 15 minutes, remove the saucepan from heat and let the syrup cool slightly.
- Strain the syrup through a fine-mesh sieve or cheesecloth into a clean, sterile container, such as a glass jar, to remove the juniper berries and zest, leaving a smooth liquid.
- Allow the Juniper Lime Agave Syrup to cool completely before covering and storing in the refrigerator. The syrup can be stored for up to 2 weeks.
