- 1 cup dried green lentils
- 1 banana, mashed
- 1 cup all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/4 cup extra-virgin olive oil
- 2 tablespoons freshly-squeezed lemon juice
- 2 tablespoons maple syrup
- 2 tablespoons finely-chopped fresh lemon balm leaves
Instructions
- Preheat your oven to 350°F.
- Begin by washing and rinsing the lentils
- While the lentils are cooking, prepare the rest of the ingredients
- In another bowl, whisk together the olive oil, lemon juice, and maple syrup.
- Add the cooked lentils to the dry ingredients and stir to combine.
- Now it’s time to add the wet ingredients to the dry
- Grease a 9x5-inch loaf pan with olive oil
- Bake the loaf for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the loaf to cool for at least 10 minutes before slicing.
