- Meanwhile, prepare the lotus root by slicing it into thin circles and blanching them in a pot of boiling water for 3 minutes
- Strain the oil from the lemon verbena and set aside

- Reduce the heat to low, add the remaining lemon verbena oil, and simmer for 10 minutes, stirring occasionally
- Serve the lotus root in the lemon verbena oil.
