Equipment
Ingredients
- 2 tablespoons sesame oil
- 1 onion, diced
- 4 cloves garlic, diced
- 2 tablespoons fresh ginger, diced
- 2 tablespoons lemongrass paste
- 1 teaspoon ground coriander
- 1/4 teaspoon crushed red pepper
- 6 cups vegetable broth
- 2 cups lima beans
- 2 tablespoons fresh lime juice
- 1 teaspoon sea salt
- Fresh cilantro and lime slices for serving
Instructions
- Heat 2 tablespoons of sesame oil in a large pot over medium-high heat.
- Stir in 2 tablespoons of lemongrass paste, 1 teaspoon of ground coriander, and 1/4 teaspoon of crushed red pepper
- Pour in 6 cups of vegetable broth
- Add 2 cups of lima beans
- Reduce the heat to low and stir in 2 tablespoons of fresh lime juice and 1 teaspoon of sea salt
- Serve the soup with a side of fresh cilantro and a squeeze of lime.
