Ingredients
- • 1 cup of dry lentils
- • 2 cups of gaba rice
- • 2 tablespoons of extra-virgin olive oil
- • 2 cloves of organic garlic, minced
- • 1 onion, finely chopped
- • 2 carrots, diced
- • 2 celery stalks, diced
- • 1 teaspoon of dried thyme
- • 1 teaspoon of ground cumin
- • 1 teaspoon of smoked paprika
- • 4 cups of organic vegetable stock
- • 2 tablespoons of organic tomato paste
- • 1/4 cup of freshly chopped flat-leaf parsley
- • Sea salt and freshly ground black pepper, to taste
Instructions
- Begin by gathering your ingredients - 1 cup of dry lentils, 2 cups of gaba rice, 2 tablespoons of olive oil, 2 cloves of garlic, 1 onion, 2 carrots, 2 celery stalks, 1 teaspoon of dried thyme, 1 teaspoon of ground cumin, 1 teaspoon of smoked paprika, 4 cups of vegetable stock, 2 tablespoons of tomato paste, 1/4 cup of chopped parsley, and sea salt and black pepper to taste.
- Add the thyme, cumin, and paprika and stir for 1 minute to release the fragrant aromas.
- Pour in the lentils and gaba rice and stir for a few minutes.
- Pour in the vegetable stock and add the tomato paste
- Reduce the heat to low and simmer, partially covered, for 15 minutes.
- Serve the stew warm and enjoy with a peaceful contemplation of the nourishing bounty of nature.
