  • • 1 cup of dry lentils
  • • 2 cups of gaba rice
  • • 2 tablespoons of extra-virgin olive oil
  • • 2 cloves of organic garlic, minced
  • • 1 onion, finely chopped
  • • 2 carrots, diced
  • • 2 celery stalks, diced
  • • 1 teaspoon of dried thyme
  • • 1 teaspoon of ground cumin
  • • 1 teaspoon of smoked paprika
  • • 4 cups of organic vegetable stock
  • • 2 tablespoons of organic tomato paste
  • • 1/4 cup of freshly chopped flat-leaf parsley
  • Sea salt and freshly ground black pepper, to taste

Instructions

  • Begin by gathering your ingredients - 1 cup of dry lentils, 2 cups of gaba rice, 2 tablespoons of olive oil, 2 cloves of garlic, 1 onion, 2 carrots, 2 celery stalks, 1 teaspoon of dried thyme, 1 teaspoon of ground cumin, 1 teaspoon of smoked paprika, 4 cups of vegetable stock, 2 tablespoons of tomato paste, 1/4 cup of chopped parsley, and sea salt and black pepper to taste.
  • Heat the olive oil in a large soup pot over medium heat and add the garlic, onion, carrots, and celery
  • Add the thyme, cumin, and paprika and stir for 1 minute to release the fragrant aromas.
  • Pour in the lentils and gaba rice and stir for a few minutes.
  • Pour in the vegetable stock and add the tomato paste
  • Reduce the heat to low and simmer, partially covered, for 15 minutes.
  • Once the lentils and gaba rice are cooked through, add the parsley and season with sea salt and black pepper to taste.
