Ingredients
- 1 cup organic, dry lentils
- 2-3 cups vegetable broth
- 1 onion, diced
- 3 cloves garlic, minced
- 1 tablespoon extra-virgin olive oil
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 cup potatoes, diced
- 1-2 cups vegetable broth
- 1 cup frozen peas
- 1 tablespoon fresh thyme leaves
- 1 teaspoon smoked paprika
- Sea salt and freshly ground black pepper, to taste
Instructions
- Begin by combining 1 cup of lentils with 2-3 cups of vegetable broth in a pot over high heat
- While the lentils are cooking, prepare the vegetables
- Heat 1 tablespoon of olive oil in a large skillet over medium heat
- Add 1 cup of diced carrots, 1 cup of diced celery, and 1 cup of diced potatoes to the skillet
- When the lentils are done cooking, add them to the skillet with the vegetables.
- Pour in 1-2 cups of vegetable broth and stir
- Add 1 cup of frozen peas, 1 tablespoon of fresh thyme leaves, and 1 teaspoon of smoked paprika
- Taste and adjust seasonings, if needed.
- Serve the stew warm with freshly baked bread.
