  • Begin by soaking the lentils overnight in a bowl of cold water
  • The next day, strain and rinse the lentils in a colander
  • In a medium saucepan, heat oil over medium heat
  • Add the vegetable broth and a pinch of salt
  • Once the lentils are cooked, add the lemon zest and juice
  • Remove the pan from the heat and season with additional salt, if desired
  • To assemble the poppers, spoon a tablespoon of the lentil mixture into one end of a wonton wrapper and fold the wrapper over the filling to create a triangle shape
  • Heat oil in a deep fryer or large pot to 375°F
  • Remove the poppers from the oil and drain on a paper towel-lined plate
