- 1 cup dried lentils
- 2 tablespoons extra-virgin olive oil
- 2 cups vegetable broth
- 1 teaspoon sea salt, plus more to taste
- 1 lemon, zested and juiced
- 1 package wonton wrappers
- Vegetable oil for frying
Instructions
- Begin by soaking the lentils overnight in a bowl of cold water
- The next day, strain and rinse the lentils in a colander
- In a medium saucepan, heat oil over medium heat
- Add the vegetable broth and a pinch of salt
- Once the lentils are cooked, add the lemon zest and juice
- Remove the pan from the heat and season with additional salt, if desired
- To assemble the poppers, spoon a tablespoon of the lentil mixture into one end of a wonton wrapper and fold the wrapper over the filling to create a triangle shape
- Heat oil in a deep fryer or large pot to 375°F
- Remove the poppers from the oil and drain on a paper towel-lined plate
