  • 1 teaspoon lime zest
  • 1 teaspoon freshly squeezed lime juice
  • Salt and pepper, to taste

Instructions

  • Begin your journey of culinary rejuvenation by preheating your oven to 375°F.
  • Peel and cube one butternut squash, and place the cubes onto a baking sheet lined with parchment paper
  • In a large skillet over medium heat, warm two tablespoons of olive oil
  • Add one tablespoon of freshly grated ginger and one teaspoon of ground coriander and cook for one minute.
  • Add one can of diced tomatoes, one can of light coconut milk, and one teaspoon of lime zest
