Ingredients
- 1 butternut squash, peeled and cubed
- 2 tablespoons olive oil, divided
- 1 onion, diced
- 1 tablespoon freshly grated ginger
- 1 teaspoon ground coriander
- 1 can diced tomatoes
- 1 can light coconut milk
- 1 teaspoon lime zest
- 1 teaspoon freshly squeezed lime juice
- Salt and pepper, to taste
- Cooked rice or quinoa, for serving
- Fresh cilantro, for garnish
- Lime wedges, for garnish
Instructions
- Begin your journey of culinary rejuvenation by preheating your oven to 375°F.
- Peel and cube one butternut squash, and place the cubes onto a baking sheet lined with parchment paper
- In a large skillet over medium heat, warm two tablespoons of olive oil
- Add one tablespoon of freshly grated ginger and one teaspoon of ground coriander and cook for one minute.
- Add one can of diced tomatoes, one can of light coconut milk, and one teaspoon of lime zest
- Add the cooked squash and reduce the heat to low
- Add one teaspoon of freshly squeezed lime juice and season to taste with salt and pepper.
- Serve the curry with cooked rice or quinoa, garnished with fresh cilantro and lime wedges.
