- Coconut milk (1/2 cup)
- Honey (1/4 cup)
- Cornstarch (1 tablespoon)
- Diced mango (1 cup)
- Shredded coconut (1/4 cup)
Instructions
- To make the crust: In a medium bowl, whisk together the almond flour, coconut flour, and baking powder
- Bake for 10 minutes, or until the crust is lightly golden
- To make the filling: In a medium bowl, whisk together the coconut milk, honey, and cornstarch
- In a medium saucepan, bring the coconut milk mixture to a boil over medium-high heat, stirring continuously
- Remove from heat and stir in the diced mango.
- Pour the filling over the cooled crust
- Bake for 25 minutes, or until the edges are lightly golden
- Slice the bars into 12 squares and enjoy!
