- 1/2 cup shiitake mushrooms, chopped
- 1/2 cup maitake mushrooms, chopped
- 1 cup almond milk
- 2 tablespoons chopped fresh thyme
- 2 tablespoons fresh parsley, chopped
- 2 tablespoons fresh sage, chopped
- 2 tablespoons fresh rosemary, chopped
- 1 teaspoon dried oregano
- 1/2 teaspoon ground turmeric
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground cinnamon
Instructions
- Heat the olive oil in a large pot over medium heat.
- Pour in the vegetable broth and bring to a boil.
- Pour in the almond milk and thyme, and continue to simmer for an additional 10 minutes.
- Taste and adjust seasoning with salt and pepper as desired.
