Ingredients

  • 1 cup of mung beans
  • 1 finely chopped shallot
  • 1/2 cup chopped mint leaves
  • 1/2 teaspoon of sea salt
  • 1/4 teaspoon of freshly ground black pepper
  • Extra mint leaves and sea salt for garnish (optional)

Instructions

  • In the morning, rinse the beans and drain them through a colander.
  • Place the beans in a food processor and pulse until a coarse mixture forms.
  • Add 1 finely chopped shallot, 1/2 cup chopped mint leaves, 1/2 teaspoon of sea salt, and 1/4 teaspoon of freshly ground black pepper to the food processor
  • Set the mixture aside and heat a heavy skillet or griddle over medium-high heat.
  • Using your hands, form the bean mixture into 3-inch patties.
  • Place the patties in the skillet and cook for 3 minutes per side, or until golden brown.
  • To serve, place the tikkis on a plate and garnish with freshly chopped mint leaves and a sprinkle of sea salt.
