- ¼ cup Millet Flour
- ¼ cup Muscadine Flour
- ½ teaspoon Baking Powder
- Pinch of Salt
- ¼ cup Coconut Oil
- ½ cup Coconut Sugar
- 1 teaspoon Vanilla Extract
- ¼ cup Almond Milk
- Coconut Oil for greasing Muffin Tin
Instructions
- Begin your journey by preheating your oven to 350°F.
- In a medium-sized bowl, whisk together 1/4 cup of millet flour, 1/4 cup of muscadine flour, 1/2 teaspoon of baking powder, and a pinch of salt.
- In a separate bowl, stir together 1/4 cup of coconut oil, 1/2 cup of coconut sugar, and 1 teaspoon of vanilla extract until blended.
- Add 1/4 cup of almond milk and stir until combined.
- Gradually add the dry ingredients to the wet ingredients and stir until just combined.
- Grease a muffin tin with some coconut oil and spoon the batter into the tin.
- Bake in the oven for 20 minutes or until a toothpick inserted into the center of a muffin comes out clean.
- Allow to cool before serving.
- Enjoy your muscadine and millet muffins with a cup of tea and be mindful of their sweet, nutty aroma and the delight of your taste buds.
