Ingredients

- 1 shallot, chopped
- 1 garlic clove, minced
- 1 cup of Arborio rice
- 3 cups of vegetable stock
- 1 cup of fresh peas
- 3 tablespoons of butter
- 1/2 cup of grated Parmesan cheese
- 1/4 cup of chopped fresh mint
- 2 tablespoons of lemon juice
Instructions
- Add 1 cup of Arborio rice and stir to coat the grains in the oil
- Pour in 3 cups of vegetable stock and stir to combine
- Add 1 cup of fresh peas and stir to combine
- Turn off the heat and stir in 3 tablespoons of butter, 1/2 cup of grated Parmesan cheese, 1/4 cup of chopped fresh mint, and 2 tablespoons of lemon juice
