Instructions

  • Prepare the French Toast Batter:
  • In a mixing bowl, whisk together the eggs, cream, honey, and vanilla extract.
  • Dip each slice of brioche into the batter, ensuring both sides are coated.
  • Cook the French Toast:
  • Heat butter or ghee in a non-stick skillet over medium heat.
  • Fry each slice until golden brown on both sides. Set aside on a warm plate.
  • Make the Apricot Jam Pearls:
  • In a saucepan, mix the apricot jam, water, and agar-agar. Bring to a simmer while stirring, until the agar-agar is fully dissolved.
  • Remove from heat and let it cool slightly, but not set.
  • Fill a syringe or dropper with the jam mixture.
  • Drip the jam into the cold oil, creating small pearls. The cold oil will set the agar-agar, forming a pearl-like texture.
  • Once the pearls are formed, carefully strain them from the oil and rinse with cold water.
  • Assemble the Dish:
  • Place a portion of the French toast on each plate.
  • Scatter a generous amount of apricot jam pearls over the toast.
  • Serve:
  • Dust with powdered sugar and garnish with fresh apricot slices.
