Instructions
- Prepare the French Toast Batter:
- Dip each slice of brioche into the batter, ensuring both sides are coated.
- Cook the French Toast:
- Fry each slice until golden brown on both sides. Set aside on a warm plate.
- Make the Apricot Jam Pearls:
- Remove from heat and let it cool slightly, but not set.
- Fill a syringe or dropper with the jam mixture.
- Once the pearls are formed, carefully strain them from the oil and rinse with cold water.

- Place a portion of the French toast on each plate.
