Ingredients
- 2 tablespoons of extra-virgin olive oil
- 1/2 cup of finely chopped onion
- 1/2 cup of Arborio rice
- 1 cup of organic chicken stock
- 1/2 cup of organic pureed pumpkin
- 1 tablespoon of chopped fresh sage
- Salt and freshly ground black pepper, to taste
- 1 tablespoon of unsalted butter
- 1/4 cup of freshly grated Parmigiano-Reggiano cheese
- Fresh sage leaves or pumpkin seeds, for garnish
Instructions
- Begin by warming a large skillet over medium heat
- Add 1/2 cup of Arborio rice and stir until the grains are evenly coated in the oil
- Pour in 1 cup of chicken stock
- Simmer the risotto, stirring often, until the liquid is absorbed and the rice is tender, about 15-20 minutes.
- Serve the risotto warm and garnish with fresh sage leaves or pumpkin seeds.
